Our Founder's Backstory
From Athlete to Advocate: Sarah has worked in fitness and wellness since 2009, starting as a tennis coach in high school in Denver. After struggling with overexercise and underfueling as a young athlete, she experienced career-ending injuries that shaped her desire to create better support systems for others.

A Clinical & Collegiate Foundation: In college, she became a rock climbing instructor and managed her university's multiple athletic facilities while earning a double degree in Medical Anthropology and Nutritional Sciences. After originally planning to pursue medicine, she quickly pivoted when she realized how much she wanted to maintain a food first approach with her clients. She followed her gut and earned her master’s in nutrition and completed her dietetic internship in Chicago. Soon after, she began practicing as a registered dietitian and eventually became a certified personal trainer.

While in Chicago, she worked with athletes and students at Northwestern, University of Chicago, Loyola, DePaul, and more. She also spent time in a Level I Trauma hospital and managed high-end restaurants in downtown Chicago—developing her trademark mix of empathy, structure, and stamina.

The Birth of SkimWellness: Sarah later joined Texas Christian University athletics in Fort Worth, helping implement fueling practices for all the department's athletes. She celebrated many of her athletes' success on screen, including when TCU made it to the national football championship in 2023. Many of the athletes she worked with directly are still competing at the highest levels in the NFL and NBA today. In late 2023, she officially launched SkimWellness full-time, specializing in sports nutrition, eating disorder recovery, and integrative health.

Since launching her private practice, she’s worked with over 300 clients and partnered with brands like AllTru, The Athlete Agenda, Real HP, and is currently overseeing SkimWellness' work for F45 NYC as their official nutrition partner. Outside of working with clients and executing partnership deals, Sarah mentors her clinical team to extend the same high-quality care she wishes she'd had as a young athlete.
